This delicacy is only cooked 3 times a year; Christmas, Thanksgiving and Easter. This amazingly sweet side is packed with butter, sugar, and everything else to put a smile on your face and make you feel content for hours after you eat it.
Ingredients
- 2x 40 ounce cans of sweet potatoes (cut yams in syrup)
- Alternatively, 3 cups sweet mashed potatoes, cooked and peeled
- 1 large bag of jet-puffed marshmallows (you can use the small marshmallows too)
- 3/4 cup melted butter (salted)
- 1/3 cup softened butter (salted)
- 2 large eggs, lightly beaten
- 1/2 cup granulated sugar
- 1 cup brown sugar (we prefer dark brown sugar)
- 1/3 cup all purpose flour
- 1/2 tsp cinnamon
- 1 tsp vanilla
- 1 cup chopped pecans (optional)
Things to know
- Take the butter out an hour before you think to start this in order to begin softening it. You want it to be very soft for when you mix it for the brown sugar topping.
- Melt the butter in advance - I did this by sticking the butter in a metal bowl in the oven while it preheats
- You can soften the butter in the microwave for 20 seconds on 30% power
Directions
- Preheat oven to 350
- Begin melting the butter by putting it in the oven while it pre-heats
- Grease a baking dish (I use butter for this)
- Mash the sweet potatoes in a LARGE mixing bowl, until there are no chunks
- Combine the following ingredients in to the sweet potato mash:
- 2 large eggs, lightly beaten
- 1/2 cup granulated sugar
- 1 tsp vanilla
- 1/2 tsp cinnamon
- 3/4 cup melted butter
- Pour combined ingredients above into greased baking dish and spread evenly
- Combine the following ingredients in a MEDIUM mixing bowl. I find that combining this with your hands works best:
- 1 cup brown sugar
- 1/3 cup all purpose flour
- 1/3 cup softened butter
- 1 cup chopped pecans (optional)
- Sprinkle/smear combined ingredients above to evenly coat the potato mixture in the greased pan
- Bake at 350 for 30 minutes COVERED with foil
- Remove foil and continue to bake for 10 minutes to let the brown sugar mixture begin to caramelize
- (Recommended) BROIL for 2 minutes on high to get some caramelization on the brown sugar mix
- Check to see it is bubbling and you can probably pull it out at that point - you don't want to burn it
- Place marshmallows over baked brown sugar mixture and briefly broil (about 30 seconds) until marshmallows begin to brown
- You can also use a blow torch to evenly brown the marshmallows.
