Hosting a party? Give them a taste of the south with this classic Ro-Tel dip. You'll be surprised how tasty this is and how quickly it will disappear from your crock pot!

Ro-Tel Dip

Ingredients

  • 2x 32 ounce original Velveeta cheese blocks
  • 2x 10 ounce cans Ro-Tel Tomatoes Diced & Green Chilies original
  • 10-12oz your beer of choice
  • 1 Tbsp garlic powder
  • 1 tsp paprika
  • 1/2 tsp chili powder
  • 1/4 tsp cayenne

Directions

  1. Cut up the Velveeta block into 1 inch sized cubes
  2. Turn your crock-pot to high and place half of the cheese inside to warm up
  3. Stir every 5 minutes or so until somewhat warm and melted
  4. Place the other half of cheese cubes inside, along with 4 ounces of beer and the two cans of Ro-Tel
  5. Continue stirring every 5 minutes or so
  6. Keep an eye on the temperature and if the sides begin to bubble or burn, turn it down to low or warm. It eventually turns into a balancing act from having it completely off or on the warm setting
  7. Once those ingredients are somewhat combined and cheese is a similar consistency, add the spices above and some more beer
  8. Stir slowly to combine well and add more beer as necessary
  9. Taste and add any extra spices you desire
  10. Serve!
